How to choose the best substitute for pancetta?

The most common substitute for pancetta is bacon, although it must be boiled to be more precise. Pancetta is basically Italian bacon that comes from a pig's stomach, much like American varieties. Unlike American bacon, which is both salted and then smoked, the Italian type is only salted and therefore lacks the common smoky flavor of bacon. One way around this problem is to boil or blanch the bacon for a few minutes before using it as a substitute for pancetta in a recipe, as the water removes some of the smoke.

How to Choose the Best Pancetta Substitute

In many ways, American and Italian bacon are quite similar, what to substitute for pancetta, and thus American types are the most common substitute for pancetta in many recipes. However, it is important to keep in mind that they are dried and seasoned differently, so their flavors will not match perfectly. In a dish in which pork is a major ingredient, such as a recipe that uses meat as the main source of flavor, Italian versions should be used whenever possible. However, recipes that only use it as a secondary ingredient often work quite well, even using a substitute for pancetta.


Bacon is the most common substitute for pancetta, as it is essentially the same cut of meat and is often treated quite similarly. The bacon is smoked, which gives it a characteristic flavor, deep but quite different from Italian meat. One of the best ways to get around this problem is to boil or blanch the bacon in water for several minutes. This can be quite brief, so that the bacon is not cooked, but the smoky flavor is drawn from it into the water. The bacon can then be used as a substitute for pancetta in any dish and should be treated as required by the recipe.


A kosher substitute for pancetta is a little harder to find though, as pork of any kind does not work. Goose or duck may be the best option, as they can have a fat content quite close to American and Italian bacon, which is important for most dishes that contain it. Salted duck or goose may be available in some areas and may offer a similar flavor. There are also types of corned beef, such as pastrami, which can be a great substitute for pancetta when pork is avoided.
